Every year I grow more convinced that our health (especially immune system) is hinged on moving away from mass produced foods generated by industrial agriculture. I strive to produce grass finished beef that has the best of both worlds: great taste and excellent health benefits. I keep cattle types that finish well on grass and do it free of chemical inputs. I plant productive crop land to high energy grasses to keep the marbling and tenderness of the beef you have grown to expect. I work with highly mineralized soil so the plants and beef are highly mineralized. The beef you get from me are not the pushed 15-month-old feedlot beef, but are raised to a flavorful two years old. I am mindful of economics, working toward spreading fixed costs on my 320 acres, and cutting out all the middlemen. Continuously from mother's milk to finish, Cliff's Grass Grown Beef are fed only grass, high quality forage, and mineral supplements, never receiving any antibiotics or supplemental hormones. The cattle are moved onto pastures in April where they will eat a mix of hay and new green grass, with the grass becoming most of their diet in three to four weeks. I have high quality well water piped across the 320 acres, and they will get a new strip of fresh green forage every day or two into December, when their diet becomes high quality hay through the winter. Water and mineral are always available. The soils of this MN/SD border area are geologically young. Time, weather, prairie, and microbes, since the last glacier, have been sufficient to decompose the glaciers’ rubble into highly mineralized soils, but not so long as to have time and rain leach the more soluble minerals away. Grasses and forbs Forbs are the broadleaved plants such as alfalfa, clovers, and others that together with grasses make up the forage that we associate with pasture and rangeland. If the land is farmed and grazed carefully, the rich soils will remain and produce rich, highly mineralized grasses and forbs. Grasses and forbs can be perennial, or annual. Perennial plants have roots that store food for the winter. They generally grow during the best of conditions. They start storing energy in the roots in the fall, come out of dormancy in the spring when winter is well past, and sometimes go into dormancy during drought. Annuals use seed as their primary survival mechanism. We grass farmers grow mostly perennials to keep the ground protected from erosion, but use annuals like rye, millet, and turnips to produce high energy grazing for the cattle when the perennials are resting. Cattle Cattle have rumens, which is a part of the stomach, and is especially adapted to digesting forages of grass and forbs. These forages are their natural foods and their rumens have a neutral pH when they are given the forage that they are designed for. This region’s potential for producing highly mineralized grasses can produce some of the most natural and high quality meat around. From the producers side, the greatest thing about a CSA is that the customer helps the producer in taking what they are extra blessed with. Adaptable customers get more for their food dollar. The likely mix will be of ground beef, roasts, ribs, minute steaks, and soup bones. I will make sure that the mix makes for a good dollar value, and if I include soup bones it will only be one package. If you want a few packages of organ meat, let me know and I'll throw them in for extra measure.

Pot Roasts (bone in arm and chuck) totaling 20lbs

Arm Roast and Chuck Roasts are the best pot roasts. Arm roasts have a round marrow bone that adds a lot of flavor, and chuck roasts have slightly more marbling and sometimes have a small blade bone. All packages are vacuum sealed.
